"Tomatoes and peanut butter? YES! The first time I attempted this at a fitness food restaurant, I was hooked. About five years of tweaking the recipe to my personal flavor has created a highly spiced, sweet favored among my friends and family. Luckily there is continually sufficient for all and sundry!"

Ingredients :

  • 2 tablespoons olive oil
  • 2 medium onions, very finely diced
  • 2 big bell peppers, (any shade) finely chopped
  • 6 large cloves garlic, minced
  • 1 (28 ounce) can chopped tomatoes with juice
  • 8 cups vegetable broth
  • 1/four teaspoon pepper
  • 1/four teaspoon crimson pepper flakes
  • half of cup raw rice
  • 1 (18 ounce) jar creamy peanut butter
  • chopped roasted peanuts (elective)

Instructions :

Prep : 20M Cook : 10M Ready in : 1H20M
  • Heat olive oil in a massive stock pot over medium-high warmth. Cook onion, bell pepper, and garlic until lightly browned, approximately five minutes. Stir in tomatoes with their juice, vegetable broth, pepper, and pink pepper flakes. Simmer, exposed, for 15 mins.
